Parmesan Crusted Tilapia



I have been trying to incorporate more fish into our diet. Last Friday I decided to try Tilapia. This recipe was wonderful and 2 out of our 3 boys ate it without protest. (That is a pretty decent number at our house.)

Parmesan Crusted Tilapia

6 Tilapia Filets
2 eggs beaten
1 TBS water
1/4 cup butter, melted
1/2 tsp paprika
1/2 cup break crumbs
1/4 cup shredded parmesan

Preheat oven to 375. Rinse, and dry fish. Mix 2 eggs with water in a bowl. Combine the butter, bread crumbs, parmesan cheese, and paprika. Dip the fillets in the egg and then lightly coat with the crumb mixture.

Place in a greased pan and cook at 375 for 12-15 minutes or until flaky.
