Peach Muffins

This is the recipe for the peach muffins that I made the other day.



I got the recipe from another one of my Gooseberry Patch Cookbooks- Comfort & Joy.

GOLDEN PEACH MUFFINS

1-1/2 C. flour
1 c. sugar
3/4 t. salt
1/2 t. baking soda
1/8 t. cinnamon
2 eggs
1/2 c. oil
1/2 t. vanilla extract
15 oz can sliced peaches, drained and finely chopped.

Combine flour, sugar, salt, baking soda, and cinnamon; add eggs, oil, and vanilla. Stir until moistened; fold in peaches. Fill muffins cups 2/3 full; bake at 375 degrees for 25-30 minutes until golden. Makes 16.

I doubled this recipe and it made 36 muffins. My husband seemed to like them a lot. He ate 12.
